Add all of the ingredients in a pot and simmer the mixture for one minute. Then, pour it in a cup and consume it.
-One gallon of spring or filtered water;
-One cup of turmeric (fresh) or 1/3 cup of dried root;
-One cup of sugar or rapadure;
-Half cup of water kefir grains;
Peel the turmeric and ginger and chop roughly. Pour the water in a pan and put it on the stove. Bring the water to boil. Then, add the turmeric and the ginger in the pot and lower the heat. Cover the pot and cook it for one hour. Then, put the mixture in the fridge to cool. After that, strain the mixture and pour the liquid in a large glass jar (1 gallon). Then add the rapadura or sugar and mix until it is dissolved. Add the water kefir grains and cover the glass with dish towel. Leave it to stay for three to five days.
It tastes tangy, fizzy and a bit sour when it is done. Keep the mixture in the refrigerator and consume it whenever you like.
