-Two cups of cucumber (Peeled; chopped and seeded);
-Quarter cup of red onion (chopped);
-Two tbs. of parsley (fresh; chopped);
-Four and a half tsp. of cilantro (fresh; chopped);
-One seeded and chopped chili;
-One chipped garlic clove;
-Quarter cup of Greek yogurt (or cottage cheese or ricotta);
-Half a tsp. of lime juice;
-Quarter tsp. of ground cumin;
-One and a half tsp. of lemon juice;
-Quarter tsp. of sea salt;
Mix the first 7 ingredients in a small bowl and in another bowl mix the other 5 ingredients. Then, combine the first mixture with the second and stir well. Cover it. This mixture can be served on whole grain toast.
